Pinterest Friday - Food Edition
I know this post is a little different for a scrapbooking and craft blog. Some of my favorite things to pin on Pinterest are recipes. I am always looking for new dinner ideas. I love to cook and bake, but food is not my specialty. A little bit about me as a cook ~ I am messy.
The recipes I am sharing today are Pinterest inspired. One of them uses quinoa, which I was introduced to a couple of years ago and was not sure I liked it. Then last year, I heard about a recipe using quinoa. It was so yummy (I will share it with you sometime). When I saw this recipe on Pinterest, I was excited to try a new quinoa dish.

Buffalo Chicken Quinoa Salad
Thanks to Half Baked Harvest, my husband and I enjoyed this for dinner one night. Tieghan mentioned that you do not need to add all of the "dressing." I love buffalo chicken and don't mind the spicy taste, but I would probably add less of the dressing next time and possibly a little less blue cheese. If you like buffalo chicken, this is a great way to try quinoa.
Winter Minestrone and Garlic Bruschetta
This was absolutely delish. I made pasta to go with it, but I did not add it to my bowl. The kids and the hubby had pasta in their serving. The veggies were enough and filling for me. I added a little pecorino romano cheese - my fave. I highly recommend this hearty, healthy and delicious soup. Thank you to Lindsey from Crave by Random House for sharing this recipe. One other thing, I used homemade pesto that my mom made. I had it in the freezer.
P.S. - I included a picture of the veggies cooking ~ I loved the colors!
